Well it’s been hard to sit down and write over the last few months. It’s not the time, because God knows I have had tons of time, but the motivation has just not been there. The darkness of Alaska hasn’t been something I have experienced in a long time and it sure did affect me. My usually motivated self became more or less a hermit, with extremely rare occasions of going out and my weekly hot yoga to keep me sane. I haven’t taken as many photos as I used to and I watched way more movies than I ever have. But all that is the past, here I am, ready to step back out into the sunlight (finally!).
The days are getting longer at an exponential rate and there are many exciting things to look forward to this summer!
Although the writing has been non existent, so many great things has happened over the last few months! December 4th we brought home a lovely addition to our family -Ollie. He is the smartest, most handsome chocolate lab – of course I’m bias. He has brought so much joy to my life and really has helped me get through this harsh winter.
Another thing to give us comfort over the winter has been food! Seth and I have been experimenting with some new recipes. Seth has become quite the soup/ stew connoisseur. He has been making a different soup each week and its been really nice in the cold weather. I have been trying some new things as well: a few different risotto dishes, some indian recipes and gluten free pasta dishes. I would like to get a food blog up together soon to discuss different things we try, but that will probably a bit later down the road.
The last thing I wanted to talk about is the weather that we have been enduring over the winter. This has been one of the coldest winters that Alaska has experienced, with weeks where we didn’t see above 0 degrees. The snow has fallen in record amounts, while the lower 48 had one of the driest winters (Reno still having no major snowfall). Hopefully the worst is behind us – over the last few weeks it’s been in the 20s – 30s – because I don’t know how much longer I could take it. Portland is looking nicer and nicer the longer I’m here.
I’m trying to make the best of the rest of the time I’m in Alaska. I get really down some days and want nothing more to be anywhere else, but I know that I’ll miss it here once I’m gone. The summer will be full of adventures and getting out if the state for a few trips will help too. I will be more positive and look at all this craziness as an adventure.
And with that – adventure on.
The following are a few meals that we have enjoyed over the last few months.
